is a bit of a cultural ambassador for the Crimean Tatar people, but unlike most she speaks
impeccable English, having taught the language to generations of local children. Cultural
immersion starts at break fast - each day it is a presentation of a new Tatar dish. Tours,
mountain treks and free cooking classes are on offer. Call ahead for free pickup from the
train station.

(vul Gorkogo 21; mains 30-60uah; 8am-11pm; ) A plov (a variation of pilaf) master is
conjuring a magic stew in the kazan (traditional wrought-iron bowl), while patrons
spread comfortably on Oriental rugs. Apart from the usual Tatar dishes, they make excel-
lent yantyk (a pie-like pastry) and Bakhchysaray's best Turkish coffee. The latter is
served with lumps of sugar that you are expected to put straight into your mouth, rather
than in your cup.

(vul Lesi Ukrainki 1; mains 25-70uah; 8am-10pm) Popular with locals and tour groups, this
super-friendly cafe on the main drag has Turkish-style rugs on the upper terrace surroun-
ded by a garden, and European tables on the lower terrace, which features an artificial
waterfall. The shashlyks are superb and we also loved the small yerash (dumplings with
walnut paste).
Karavan Sarai Salachik CRIMEAN TATAR$$$
( 452 220; vul Basenko 43A; mains 50-80uah) Hookah pipes replace alcohol at this restaur-
ant, in which individual gazebos with topchans (low Turkish-style seating) are dotted
across a landscaped lawn. There are all the usual Crimean Tatar dishes, including sheker
keyeks (a little bit like traditional Turkish baklava) for dessert.
