Lemon Refrigerator Cookies
These cookies have welcomed guests to the historic inn for
decades. This delectable cookie is a traditional signature
trademark started by the Gleichmann Family, the owners
of the Pierpont Inn for 70 years. The Gleichmann Fam-
ily wanted to make their visitors feel at home upon their
arrival at the Inn, so they greeted their guests with fresh-
baked cookies to enjoy by the ever-faithful family hearth,
which welcomed guests year-round. In the early days, the
Gleichmanns often left the guests' room keys on the front
desk counter for late-night arrivals. Although the key
tradition has changed, the hospitality continues with the
Gleichmanns' lemon cookies.
But why a lemon-flavored cookie? The Gleichmann
family procured their produce from the local farming
communities in Ventura County. Pierpont Executive
Chef Louis Ludwig explains, “With bountiful orchards of
lemons in the region, the Gleichmanns created this classic
lemon cookie recipe, which remains the same today, and
utilizes the rind, juice, and pulp of the lemon.”
Admirers of the classic cookie often ask Chef Louis for
the “secret” family recipe so they can take home a piece of
The Pierpont tradition. The traditional Lemon Cookie
recipe, as well as the popular Chocolate Chip Macadamia
Nut Cookie recipe, are both available for visitors at the
front desk upon request.
