Polo Lounge Country Style
Meatloaf with Roast Corn Sauce
Combine the first five ingredients with an electric
mixer, fitted with the paddle attachment and blend
together on a slow speed. Blend for 3 to 5 minutes and
then add eggs separately.
3 pounds ground beef
1 pound chorizo
1½ whole green peppers, minced
1 sprig rosemary, minced
1½ whole onions, small diced
Add the breadcrumbs and continue to mix for another
5 to 8 minutes. It will be a light consistency.

3½ ounces breadcrumbs
½ cup tomato marinara sauce
Spray a medium-sized loaf pan with vegetable spray
and pour in the meat mixture, up to the top. Spread
the marinara sauce evenly on top of the meatloaf. This
will form a flavorful crust while baking. Bake in a pre-
heated oven at 350 degrees for approximately 1 hour.
Serve with Roast Corn Sauce (recipe follows).
