Roast Corn Sauce for
Country Style Meatloaf
In a hot saucepan, sauté the garlic and shallots in oil
until golden in color. Add the corn and continue to
sauté, then add the tomato.
2 garlic cloves, minced
2 shallots, minced
1 tablespoon grapeseed oil
1 cup whole corn
Pour in the prepared demi-glace and bring to a boil.
Adjust seasonings and add the parsley. Whisk in the
soft butter and serve.
