Crispy Cactus Appetizer
Drain cactus well. Combine dry ingredients in large
bowl. Toss cactus thoroughly. Shake off excess flour.
Deep fry in very hot oil until crispy, about 2 minutes.
1 jar nopalito cactus (found
in ethnic food section of
grocery store)
1 cup flour
Serve with your favorite dipping sauce.
1 tablespoon Cajun seasoning
(chile, garlic, white pepper,
cumin, and paprika)
Chef's Note: At Furnace Creek Inn, we use three
sauces: yellow tomato salsa; guacamole and sour cream
mixture; and prickly pear and jalapeƱo jelly mixture.
