The production report should be copied to the veteri-
nary surgeon supervising the holding.
The plant OV (or a delegated poultry meat inspector
(PMI)) is responsible for relaying adverse results of
post-mortem inspections and dead on arrivals (DOAs)
of consignments back to the holding, slaughterhouse
management and veterinarian responsible for the
holding as he or she or she feels necessary.
Post-mortem inspection in the plant
Plant inspection assistants (PIAs) in the United Kingdom
are plant employees who have been trained to undertake
post-mortem inspection on the whole bird and eviscera-
tion inspection points. They can therefore replace PMIs,
who now carry out more of a supervisory role, but only
with the agreement of the competent authority and after
discussion with the OV. Some purchasers of poultry prod-
ucts insist on the independence of PMIs for inspection.
Poultry inspection assistants are taught the theory and
practice of anatomy and physiology, pathology and meat
inspection and also poultry welfare and legislation.
