The heart, liver and gizzard (the giblets) may be
pooled and inserted into the body of chickens which are
to be frozen. Giblets are more frequently contaminated
with Salmonella than other sample sites, and chickens
which contain them are more often contaminated than
those without giblets. The carcase and skin of these
chickens are more frequently contaminated with
Salmonella enteritidis PT4 than these sites in chickens
not containing giblets, irrespective of whether the giblets
themselves were contaminated.
The same study also found that frozen chickens
were  significantly more regularly contaminated than
chilled chickens.
Partial evisceration (or effile) is carried out in Great
Britain. In this process, the intestines are removed, but
the remaining viscera are left inside the carcase. Delayed
evisceration is also permissible, where uneviscerated
birds are held for up to 15 days under refrigeration at no
more than 4°C before evisceration and post-mortem
inspection are carried out.
New York-dressed (NYD) birds are sold uneviscerated
and with the head and feet left attached. The EEC market-
ing of NYD birds from licensed premises was banned from
1 May 1997. However, NYD birds may still be produced
and marketed by exempt slaughterhouses (i.e. those
producing fewer than 10 000 birds/year). NYD birds
