The “bulb” of the kohlrabi is actually the enlarged, swollen stem of the plant.
SELECTION CHARACTERISTICS Though it is natural for the kohlrabi's swollen stem to become
“woody” over time, the direction of selection for the plant has historically been for an ever larger,
more tender bulb that gets woody as late as possible. This trait needs to be constantly selected for. Oth-
er selection criteria:
• size, shape, and color of bulb
