Many of those great people make up her staff. Dos Locos also lays claim to this year's
Best Bartenders, Urania Espinoza Rojas, Margarita Rojas Jiminez and Karla Mora Ruiz. It
says a lot about Vera and Dos Locos that some of them have been there since the begin-
ning.
“Dos Locos is not about Vera Jones,” she says. “It's about the support team behind it.
The bartenders, the kitchen staff, all of these people, they support me. And I so appreciate
the fact that they're here for me.” She is adamant that her people work as a unit. What the
bar and wait staff achieve is supported by and a reflection of what goes on out in the kit-
chen, and vice versa.
That commitment to one another is how Vera feels about Quepos in general. Although
she has seen a lot of changes in the last 20 years, she still loves the town and is committed
to making Dos Locos a vibrant part of it. “I think that Dos Locos is the central gathering
place in Quepos. It doesn't matter where or when you come into town, you are going to
walk by here sooner or later, and I want it to be so inviting that you'll want to stop and
come in. In my mind we still provide the same service as 20 years ago. We believe service
is important.”
