Emilio's Carrot Cake
Ingredients

7/8 C (7 oz) vegetable oil
·
1 cup sugar
·
3 eggs
·
1 C grated carrots (lay them on a paper towel to drain)
·
1¼ C raisins
·
1¼ C walnuts
·
1 ¾ C (8 oz) flour
·
1 tsp baking soda
·
1 tsp cinnamon
Method
1.Beat eggs, sugar and oil.
2.Sift flour together with baking soda and cinnamon.
3.Add grated carrots to flour mixture.
4.Bake at 350 for 35 minutes.
