A real Milanese will tell you that those thin, battered 'elephant ears' that currently masquerade as cotoletta alla
Milanese (cutlets Milanese-style) are a poor immitation of the real deal. For authentic Milanese cotoletta take a
taxi ride to the old meat district to Nuovo Macello ( 02 5990 2122; www.trattoriadelnuovomacello.it ; Via
Cesare Lombroso 20; meals €28-50; noon-2.15pm & 8-10.30pm Mon-Fri, 8-10.30pm Sat) where you'll be
presented with a thick, juicy slab of veal on the bone cooked slowly to perfection in butter.
Other traditional dishes to sample here are the perfectly al dente risotto, farro (spelt) with scampi, fried focca-
cia with chicory and ricotta, and sweet rice with wild strawberries. To compliment the traditional menu the res-
taurant has an understated industrial vibe.
Eating
Milan's generations of internal Italian immigrants have injected the cuisine of virtually
every region into the lifeblood of the city, where you'll also find plenty of Lombard clas-
sics alongside a rich international selection of anything from Ethiopian to sushi. Milan's
clutch of Michelin-starred chefs cook up some of Italy's most sophisticated food. Smart
spots gather around the streets near Piazza del Duomo and plenty of options dot the Nav-
igli area. Reservations are a good idea and essential for top-end establishments.

with cheeses, spinach, tomato, pesto and prosciutto.

a seat in this tiny and ever-popular restaurant, you'll find old favourites like spaghetti alla
carbonara mixed in with chef Arturo's own creations, such as polpettine al limone (little
meatballs with lemon) or riso al salto (risotto fritters) on the ever-changing, mostly organ-
ic menu.
