Flavours of Jordan
Our host stood by the circle, encouraging the appetite with pious ejaculations. At top speed
we twisted, tore, cut and stuffed: never speaking, since conversation would insult a meal's
quality, though it was proper to smile thanks when an intimate guest passed a select frag-
ment.
TE Lawrence, Seven Pillars of Wisdom
Eating in Jordan is primarily a social experience, whether conducted over a chat in Am-
man's cafes or sitting in cross-legged silence in a Bedouin tent. Many travellers leave
Jordan thinking that apart from the multicultural options in Amman and Aqaba, Jordanian
food is a tedious affair of felafel sandwiches. Anyone venturing beyond the bus station ke-
bab stands, however, will quickly find that not only is the food deliciously varied, but so is
the company they will inevitably share it with.
