Devote the second day to exploring the renowned Monasterio de Santa Catalina , a
citadel-sized convent - also crafted from sillar - stuffed with period furnishing and reli-
gious art. This is a behemoth sight, so take your time. Afterwards, grab a table at one of
Arequipa's renowned picanterías , informal country restaurants where the cooking is
homespun, the portions are generous and the chicha (corn beer) is sweet and fresh.

On the last day, get an early start (as in 4am early) for a day trip to see one of Peru's most
famous natural sights. Cañon del Colca, covered in agricultural terraces and dotted with
minuscule villages and historic churches, is a world unto itself. It's also a place where it's
still possible to see condors in flight. At Cruz del Condor , the high altitude lookout,
you'll get to stand a dizzying 1200m over the valley floor as these magnificent birds
cruise the currents before you. Totally unforgettable.
