Add ¼ cup of water and ½ cup plus 2 Tbsp vinegar to your
container. Add the remaining solid ingredients except for the
xanthan gum/purslane. Shake and allow to sit for a few
minutes. Add the xanthan gum/purslane and shake
thoroughly. Add 1¼ cup plus 2 Tbsp of olive oil. Shake
thoroughly.
The purpose of the xanthan gum or purslane in this recipe is
to keep the mixture from separating too quickly for practical
use because oil/vinegar and oil/water don't normally mix. The
xanthan gum or purslane helps to keep it in suspension. If you
use xanthan gum, don't use more than the recommended
amount or you'll end up with a jelly-like substance rather than
dressing.
