The procedure is straightforward. Add the cleaned herbs to
the container that will hold the herbal vinegar. Heat up the
vinegar to a simmer (NOT a boil!), and then pour the vinegar
into the container holding the herb. Seal the container. Allow
the flavors to meld for three or four weeks to develop the full
flavor before using.
If you want something really impressive for making an oil
and vinegar dressing for salad, I would suggest making
vinegar from pear wine, and then using the pear vinegar to
make a borage herbal vinegar.
Oil and Vinegar Dressing
Ingredients:

ounces Virgin olive oil
5
ounces Hand-crafted wine vinegar

ounces Water
1 Tbsp Pulverized dehydrated sweet red pepper
1 Tbsp Pulverized dehydrated onion
1 tsp Sea salt
1 tsp Garlic powder
1 tsp Dried oregano
1 tsp Dried basil
p Xanthan gum OR ½ tsp dried powdered purslane or
okra (optional)
