When the allotted blanching time has passed, the produce
should be dumped into a bucket of ice water so that it is
cooled down immediately. (I slip a metal colander into the
bucket first so that it holds the produce and makes it easy to
retrieve.)
Leave the produce in the ice water for the same amount of
time as it was being blanched, then take it out and put it
between a couple of superclean, dry, and fluffy towels to pat
dry. You have to do this when vacuum sealing otherwise the
large water content gets in the way of making a good seal.
Drying the produce with freshly cleaned towels before
bagging.
