• More cows and goats would be hand-milked. This would require smaller dairy cow
farms than at present, though many goat herds could remain the size they are at the
moment. In the 1970s, I worked on a farm in France where 140 goats were milked
by two people twice a day - two litres per goat at a rate of about a litre a minute.
The largest number of sheep I have known to be milked by hand by a single person
is 35 (in France), and the largest number of dairy cows I have heard of, ten (in Bri-
tain, 1940s).
