• Pasteurization of milk, which involves heat and then cooling, is widely agreed to be
necessary at an industrial scale, for public health reasons; but unpasteurized milk is
acceptable at a local level where the source is known, and risks can be assessed by
the consumer.
• Milk production would become more localized. Distribution in many areas could
best be achieved through temperature controlled milk-dispensing machines which
dispense with the need for bottling and packaging by serving straight into the
