supplies if you know how to find them. Not only will many of your fall crops store well throughout
the winter, but your fall garden can continue to produce for a long time. In some climates, through
the whole season. Not to mention how you can take advantage of the food you have stored.
Applesauce Oatmeal Coffee Cake
Warm your kitchen and the hearts of your loved ones as well. Sweet applesauce gives this
comfort food a delicious taste.

1 cake

35 to 40 minutes
1 1-inch slice
3 cups quick or old-fashioned oats
1 1 2 cups unbleached flour
1 tsp. allspice
1 1 2 tsp. baking soda
1 cup whole-wheat flour
3 4 tsp. cinnamon
2 tsp. baking powder
1 cup plus 1 TB. brown sugar
1 cup milk
2 eggs
2 cups applesauce
6 TB. vegetable oil
1. Preheat the oven to 375°F. Combine oats, unbleached flour, allspice, baking soda,
whole-wheat flour, 1 2 teaspoon cinnamon, baking powder, and 1 cup brown sugar.
2. Mix together milk, eggs, applesauce, and vegetable oil and add to the dry ingredients,
stirring just until moistened.
3. Pour into a 9×12 baking pan.
4. Combine remaining 1 tablespoon brown sugar and remaining 1 4 teaspoon cinnamon.
Sprinkle topping over batter.
5. Bake 35 to 40 minutes, or until a knife inserted in the center of cake comes out clean.
6. Cool for 10 minutes. Tipping the loaf pan on its side during cooling will make it easier
to remove.
Over the Garden Fence
Double or triple this recipe when you have lots of fresh applesauce. The batter will freeze for a quick
breakfast another day.
