1. Preheat the oven to 350°F.
2. Place sweet potatoes in an ungreased, 3-quart baking dish.
3. Combine crushed pineapple, maple syrup, pecans, apricots, brown sugar, butter,
cinnamon, pumpkin pie spice, and salt, and pour over potatoes.
4. Bake uncovered for 45 minutes, or until heated through and bubbly.

Summer and winter squashes are ripening now, and you'll be harvesting squashes to store, and of
course many to eat as well. Pumpkins are the usual rock stars of this season and will store for many
weeks in a root cellar. Other squashes that you should not ignore in your garden include butternut,
spaghetti, and acorn squash.
Simple Autumn Skillet
Here is a flexible recipe for autumn vegetables cooked with sausage. This hearty and filling
dish provides immense flavor at a moment's notice.

1 cup
1 lb. smoked sausage or kielbasa,
sliced
2 sweet onions, sliced
1 butternut squash, peeled and
cubed
1 2 head of green cabbage, roughly
chopped
1 2 cup chicken or vegetable stock
Salt
Freshly ground pepper
1. In a large, heavy pot, cook smoked sausage over medium-low heat until fat begins to
render. Add sweet onions and stir, cooking for 2 to 3 minutes, then add butternut
squash, cabbage, chicken stock, salt, and black pepper.
2. Reduce heat to low and cover. Stir occasionally and cook until the squash is fork tender,
about 15 minutes.
