only four tables, a narrow back-alley location, no real signage and a 90-minute daily
opening window, this perplexingly unassuming
osteria
isn't really setting itself up for le-
gendary status. But tentative whispers turn to exuberant shouts when regional specialities
like
cotechino fritto con zabaglione al lambrusco
(fried Modena sausage with wine-fla-
voured egg custard) arrive at your table.
The plaudits are growing, including from hard-to-impress Italian-American 'Iron Chef'
Mario Batelli, who lists it as one of his favourite hang-outs in Italy.

Claiming the number-three spot on San Pellegrino's influen-
tial 'World's 50 Best Restaurants' list is a
big
deal, especially when your business is
based, not in Paris or New York, but…Modena. Owner Massimo Bottura is now onto his
third Michelin star (earned in 2011), a rare honour for this small 11-table restaurant where
the food is the art, the decor is secondary and tasting menus top out at €110.
