Japanese-era merchant's house, this is a fun place to try traditional dànzǎi miàn , a
simple, refreshing dish that mixes noodles with a tangy meat sauce. Dànzǎi , literally 'two
baskets and a stick', refers to the baskets used to carry the noodles around for sale. This
shop uses no MSG.

Beef soup ( niúròutāng ), a Tainan speciality is served as early as 4am for breakfast, right
after the cattle are slaughtered in the middle of the night. One of the best places to savour
the soup and the meat at its freshest is A Cun, a streetside stall that has been feeding car-
nivores for more than four decades.
