product.Thissyrupisatasteenhancerthatcansmooththemostintensetestabilityorbitternessof
afoodtomakeaproductacceptableintermsoftaste,evenforthemostdemandingconsumers.It
isusedinthemanufactureofconfectioneryandbreadproductswiththefollowingqualityissues:

Taste—Improvesthetasteinwholemealbreadsandcellulosicsubstances

Freshness—Increasestheshelflifeoffoodsandisusedtoreducestalingofbreadproducts

Coloringagent—Improvesthecolorofthecrustofbreadproductsandconfections

7.1.4.2 Storage and Packaging
Followingevaporation,theproductistransferredthroughstainless-steeltubesinatank,where
itremainsforcoolingatroomtemperature.Plasticcontainersof5,25,and50kgareused,aswell
asglasscontainersof650g.
7.1.4.3 Legislation for the Production of Staidin in Manufacturing Plants
Processingofdryraisinstomanufacturestaidinandsimilarproductsisonlyallowedwiththe
concentrationofthesugarliquidtakenaftertheextractionofdryraisinsorwiththeevaporationof
themustoffreshraisinsuntilitreachesapulpyorsolidstatewithorwithouttheadditionofaro-
maticsubstances.
Staidinmanufactureisonlyallowedinprocessingplantsdescribedasfollows:
•
Second-categorydistilleriesthatfollowthelegislation,accordingtowhichtheyareallowedtomanu-
facturewinesfromfreshraisins
•
Speciicplantsforvinegarmanufacturingthatimplementthelegislation
•
Certain staidin manufacturing plants that have permission to manufacture from the General
ChemicalStateLaboratory(GCSL)
Requirementsforcertainplantstobegrantedpermissiontomanufacturestaidinaredescribed
asfollows:
