LATIN AMERICAN SPICE IN MIAMI
Thanks to its immigrant heritage, Miami is legendary for its authentic Cuban,
Haitian, Brazilian and other Latin American cuisines. Cuban food is a mix of Carib-
bean, African and Latin American influences, and the fertile cross-pollination of
these traditions has given rise to endlessly creative, tasty gourmet fusions, some-
times dubbed 'nuevo Latino,' 'nouvelle Floridian' or 'Floribbean' cuisine.
For a good introduction to Cuban food, sidle up to a Cuban loncheria(snack bar)
and order a pan cubano:a buttered, grilled baguette stuffed with ham, roast pork,
cheese, mustard and pickles. For dinner, order the classic ropa vieja:shredded
flank steak cooked in tomatoes and peppers, and accompanied by fried plantains,
black beans and yellow rice.
Other treats to look for include Haitian griots(marinated fried pork), Jamaican
jerk chicken, Brazilian BBQ, Central American gallo pinto(red beans and rice) and
batidos,a milky, refreshing Latin American fruit smoothie.
