The FFT in (c) of the particle at the bottom left gives a lattice parameter of
6.5 nm
We have shown, as for the case without added oil, that at each investigated
temperature the structure of the entrapped internal phase is the same as that of
the nondispersed samples coexisting with excess water. This again confirms that
the internal structure of the dispersed particles at each temperature corresponds
