Banana fritters
Syrupy and indulgent, these are ideal for tired, hungry campers.
1 Make the pancake batter with
eggs and water according to the
instructions on the package, but only
use

specified. The consistency should be
of thick paint.

TIME TO COOK 5 MINS
box of pancake mix plus eggs
and water, as directed
1-2 tbsp butter for frying
1 banana (per person) sliced
lengthwise
2 Heat the butter in a frying pan. Dip
the banana slices in the batter and fry
in the hot butter until they are golden
brown on both sides.
maple syrup or honey
3 Serve hot with maple syrup or
honey drizzled over the top.
These fritters could be made with
sliced and cored apples, or pears and
pineapple rings work well, too.
