MEALS OF FARMERS
Donio and his family eat rice or ground maize, a little meat to flavor it, and little else as
seen in Figure 2.1. The meal shown is very typical of almost all meals in the Philippines
among almost all Filipinos, that is, breakfast, lunch, and dinner, from northern to
southern Philippines. Water will be the most common drink at all meals.
Figure 2.2 shows a typical meal in Ecuador. It contains meat, in this case fish, fava
beans, maize, and salad containing onions, tomato, and cabbage. Although not in this
meal, it is also common for meals in Ecuador to contain two or more carbohydrate
sources, for instance, rice and popped, baked, boiled maize, a cooking banana, and
potato as part of the meal. This would be true of all meals, although eggs might be
eaten for breakfast. Such a meal might also include some small amount of meat and
some salad. Water or a drink mix will be the most common beverage at a meal, although
tea or coffee may also be served.
Figure 2.3 shows a typical or common summer time farm meal in the United States. It
consists of maize on the cob, roast beef, salsa, and ice tea. Each person will eat three ears
of maize on the cob, which acts as both a vegetable and a source of carbohydrates in this
meal. It would also be common for this meal to include potatoes in one form or another
and some form of bread in the form of slices of bread, muffins, or biscuits.
