it is possible to obtain an order parameter that has the same definition as for ESR
and NMR.
Fluorescence Polarization can also be used to monitor lipid phase transitions
[51]
.
Figure 9.30 shows the gel-to-liquid crystal transition for DPPC as followed by the fluorescent
probe 1,6-diphenylhexatriene (DPH, Figure 9.31). DPH has historically been the most used of
all FP probes for membrane studies
[52]
.
DPH possesses several important properties justifying its use in FP investigations. This
fluorophore partitions strongly into membranes, is highly fluorescent, does not bind to
