California has become a hub for 'third wave' coffee. Pulitzer Prize-winning critic Jonath-
an Gold defines this as coffee directly sourced from farms instead of countries and roasted
to maximize the bean's unique characteristics. LA's third-wave coffee shops tend not to
roast their own, but cherry-pick the best beans from micro-roasters along the West Coast
and Chicago. San Francisco's Blue Bottle Coffee added a 'fourth wave' element of show-
manship to coffee geekery, introducing a $20,000 Japanese coffee siphon to filter their
brews. Meanwhile, SF's Ritual Coffee Roasters has become the latest object of coffee cult
worship with beans roasted in-house in small batches and hand-poured specialty coffees.
