necessity. Galettes are savory buckwheat crêpes, commonly filled with ham, cheese, eggs,
mushrooms, spinach, seafood, or a combination. Purists insist that a galette should not
have more than three or four fillings—overfilling it masks the flavor (which is the point in
certain places). Here, the word “crêpe”is used generically to mean a dessert.
