The rest of the day, the menu is dominated by Canadian game and seafood. Maybe start
with PEI mussels in traditional ale, then choose from something as Canadian as grilled
arctic char, or splurge on the Alberta beef tenderloin. Just make sure to leave room for the
smoothest crème brûlée in the city.

Calgary has grown up (and out) so much in the last decade that defining the local
cuisine is almost impossible. Steakhouses such as Caesar's were long the mainstay,
and happily they still thrive. In the last decade, it's been joined by dozens of top-
class restaurants that specialize in giving Canadian produce a modern makeover,
with Farm, Divino, Tribune, and Saltlik leading the way. A few old diners survive;
those such as the Galaxy, off trendy 17th Avenue SW, and Peter's Drive-In, along
the TransCanada Highway, have been amazingly popular since the 1960s. But in
