Ensconced in an octagonal room of the Manor Wing, Castello Ristorante
(6pm-9:30pm Fri.-Tues., $21-36) is a seductive dining room with a modern, upscale am-
bience. The menu is dominated by Italian favorites, with traditional pastas and specialties
such as veal tenderloin. The Rundle Lounge & Hall (from 11:30am daily) combines an
area filled with comfortable sofas with summer outdoor dining and an upstairs piano bar,
where most tables offer views down the Bow Valley. Grapes (6pm-9pm daily, $18-26) is
an intimate yet casual wine bar noted for its fine cheeses and pâtés. More substantial meals
such as fondues are also offered.
The hotel's most acclaimed restaurant is the Banffshire Club (6pm-10pm Tues.-Sat.,
$31-50), which seats just 65 diners. This fine-dining restaurant is a bastion of elegance,
which begins as a harp player serenades you through a gated entrance. Inside, extravag-
antly rich wood furnishings, perfectly presented table settings, muted lighting, and kilted
staff create an atmosphere as far removed from the surrounding wilderness as is imagin-
able. Reservations and a jacket are required.
