Ensconced with the stylish Hyatt Regency Vancouver is the contemporary M Mosaic

morning with a healthy, well-prepared buffet, or chose from regional specialties such as
dungeness crab benedict and banana strawberry granola. In the evening, crab cannelloni
and sweet corn bisque are both winners as starters. When it comes to a main, the choice
is yours—the type of meat, portion size, how it's cooked, and accompanying starches and
vegetables.

W. Hastings St., 604/639-4040, breakfast, lunch, and dinner daily, $15-30), at street level
of the Vancouver Marriott Pinnacle, features floor-to-ceiling windows, contemporary styl-
ing, a split-level restaurant/bar layout, and a six-meter (20-foot) canvas hanging from the
ceiling. This design creates a bright, eye-pleasing environment that's very different from
the elegant Old World feel of Vancouver's other top-end hotel restaurants. Breakfast com-
prises all of the usual traditional North American choices ($26 for a full, cooked breakfast
including coffee), but it's lunch and dinner that shine, with well-priced yet exotic dishes
prepared using local seafood and game, simply and stylishly presented. The bar menu is
tapas in name only—offering servings of battered halibut, gourmet sandwiches, and the

One of Vancouver's finest seafood restaurants is M YEW Seafood & Bar (Four Seasons
