Trius Winery at Hillebrand
Trius Winery at Hillebrand (1249 Niagara Stone Rd., NOTL, 905/468-7123,

Sat., Sept.-May, $10 tasting fee) was the first winery in NOTL to have a restaurant on-site.
Today, this spirit of innovation continues. Hillebrand focuses on the wine-tasting experien-
ce, with an emphasis on the splendor of pairing wine with the proper food. Throughout the
year,morethanadozendifferenttoursandtastingsareoffered,eachauniqueexperience.If
you like red wine, try the Trius Red ($23). It is a blend of cabernet franc, cabernet sauvign-
on, and merlot grapes and was designated as the world's best red wine at the prestigious
International Wine and Spirits Competition in London.
Between the Lines Winery
You'll taste local pride in every bottle of wine at the Between the Lines Winery (991 Four
MileCreekRd.,NOTL,905/262-0289, www.betweenthelineswinery.com ,10am-6pmdaily
Apr.-Oct., 11am-5pm Tues.-Sun. Nov.-Mar., tasting fee $1 per sample). This small family
winery is operated by the Wertsch brothers who believe that vintners should trust the local
grape varieties, rather than imitate those grown elsewhere. Their philosophy has resulted in
wines that lack pretense, with the true taste of Niagara.
At this proud boutique winery, wines are small-batch and only sold on-site in the big
red barn. For a unique wine, try the Lemberger Red. Between the Lines is the only local
winery to use Lemberger grapes. Finding the winery is easy. It's on Four Mile Creek Road,
between Line Five and Line Six Roads.
FOOD
Not content with simply baking their own bread, staff members at M Ravine Winery Res-
taurant (1366 York Rd., St. Davids, 905/262-8463, www.ravinevineyard.com , 11am-9pm
Wed.-Sun., $25) locally source all their ingredients. That means growing their own grapes
and herbs and raising their own livestock. This über-organic philosophy results in well-
paired food and wine, along with interesting conversations with employees who enjoy de-
scribing your dish's origin. The restaurant's exterior is that of a simple prairie home, while
the interior has a simple, but warm ambience with plenty of wood and rustic earth tones.
For every entrée on the menu, there is a suggested wine pairing. The braised lamb shank
and 2010 Estate Merlot perfectly complement each other.
