Four catechins and rutin were isolated from buckwheat ( Fagopyriumesculentum
Moensch) by Watanabe 83 who examined their ability to scavenge peroxyl radicals
formed during AMVN-initiated oxidation of methyl linoleate. The catechins identi-
fied were (-)-epicatechin, (+)-catechin-7-O-
D-glucopyranoside, (-)-epicatechin
3-O-p-hydroxybenzoate, and (-)-epicatechin 3-O-(3,4-di-O-methyl) gallate. The rel-
ative antioxidant activities of these compounds were compared to BHA and quercetin
as shown in Figure 6.18 . With the exception of (-)epicatechin, the other catechins
exhibited antioxidant activity only slightly less effective than BHA. Subsequent
studies by Przybylski et al. 84 also confirmed the presence of antioxidants and radical
scavenging components in buckwheat seed extracts.
