above them all is Te Mato Peak, a sacred
Maori mountain regarded as powerful and
serene.
Anchored by the lovely Art Deco town
of Napier, the Hawkes Bay region stretches
along the eastern coast of the North Island,
known as the “garden of New Zealand.”
Not only does it boast some 30 wineries to
visit, it's famous for its rich wholesome
food, much of it organically farmed. Much
of that local food ends up on the menu at
Terroir, where it is cooked on an open fire
in front of diners. The menu is strong on
meat and seafood, including—you´ve
guessed it—oysters. Steve Smith has to
get his oyster shells from somewhere.

In the wine industry, big is not beautiful.
Usually, the larger a winery is, the less well
regarded is its wine. Big, industrial opera-
tions find it difficult to persuade the con-
sumer that their wines are just as good as
mollycoddled juice from a boutique, low-
production winery with a lone and pas-
sionate winemaker.
