While raw foodists can sometimes come
off like a lunatic fringe, Pure Food & Wine
presents its raw-food agenda with such
elegant panache, you may forget that the
menu contains no meat, dairy, wheat, soy,
or refined sugars—and it's organic and
vegan to boot. While the medical merits of
a strictly raw diet are still under debate
(studies show that over the long haul,
human bodies need nutrients that raw
food can't provide), a meal at Pure Food &
Wine can be a wonderful tonic.
The theory of raw food is simple: No
ingredient is ever raised to a temperature
above 118°F, the magic point above which
certain enzymes in food get destroyed. It's
amazing, though, what a chef can do with
just blenders, dehydrators, and a really
good chopping knife. Fruits, vegetables,
nuts, and seeds are the building blocks of
raw food cuisine, so getting the best pro-
duce is essential. Of course, there's a side
benefit: Although Pure Food is on the pricy
end for veggie restaurants, even high-end
raw food can be gratifyingly cheap com-
pared to meals taken from higher up the
food chain.
The menu at Pure Food & Wine goes
well beyond health food salads and tofu
burgers. Consider, for example, a starter of
creamy cauliflower samosas with banana-
tamarind sauce, or a heart-warming but-
ternut squash soup, infused with rosemary
and topped with pecans, medjoul dates,
and a drizzle of miso coulis. A main course
of wild mushroom and asparagus en papil-
lote with celeriac cream is accented with
truffle jus, endive, and wine-soaked figs; an
