Roasted Vegetable
Turkey Meatloaf
A flavorful, low-in-fat update of the original!
½ cup chopped onion
½ cup chopped celery
Sauté onion, celery, and garlic in oil over medium-low
heat until soft, approximately 5 minutes.
½ teaspoon chopped garlic
2 tablespoons olive oil
1½ pounds ground turkey
In a mixing bowl, combine all of the other ingredients
with half of the Jimtown Roasted Vegetable Spread,
setting aside the remaining ½ cup. Spoon into lightly
oiled loaf pan (you may use vegetable spray). Bake at
400 degrees for 50-60 minutes.
½ cup breadcrumbs
1 beaten egg
1 teaspoon dried marjoram
1 teaspoon salt
½ teaspoon pepper
2 tablespoons chopped parsley
Pour off juice. Top with remaining Jimtown Roasted
Vegetable Spread and bake for another 15 minutes.
2 tablespoons dry white wine
1 teaspoon Worcestershire sauce
Tabasco to taste
