Nouveaux Louis
Toss all ingredients in a bowl with 4 ounces of Louis
dressing (recipe follows). Arrange on plate using a ring
mold. Top with spring mix salad lightly dressed with
olive oil and sea salt. Dress plate with additional Louis
dressing.
½ cup Dungeness crabmeat
10-15 cooked (31-40) shrimp
½ cup lobster meat (optional)
½ cup cantaloupe melon balls
½ cup watermelon balls
LOUIS DRESSING
In mixer, combine mayonnaise and cream. Whip for
2 minutes. Using a fine mesh strainer add sweet chile
and lemon juice and mix.
2 ounces prosciutto (cooked crisp)

½ cup heavy cream
¼ cup sweet chile sauce, strained
1 tablespoon lemon juice
