Crème Brulee
Break the egg yolks and stir with sugar until combined
and pale yellow. Stir in heavy cream. Split the vanilla
beans, scoop out the seeds, and let pods stay in mixture.
Strain mixture in a chinois. Place into ramekins and
bake in a bain-marie at 250 degrees for 2 hours.
40 egg yolks
6 cups sugar
1 gallon heavy cream
4 vanilla beans

Blue Cheese Mashed Potatoes
In a saucepan, melt the butter, add the potatoes, and
stir with a spatula until like a paste. Add the cream and
the blue cheese. Season to taste.

4 ounces mashed potatoes
2 ounces blue cheese
¼ cup heavy cream
