Key Lime Pie
Preheat oven to 350 degrees. Melt the butter and com-
bine with the cracker crumbs and sugar for the crust.
Press mixture down into an 8-inch pan and make it
even on all the sides. Bake for about 8 minutes until
golden brown.
CRUST
3 ounces butter
6 ounces graham cracker crumbs
2 ounces sugar
FILLING
Mix the yolks in a mixer for about 10 minutes until pale
yellow. Add the condensed milk and key lime juice
and mix until combined. Pour filling over crust and
bake for about 10 minutes until it is set.
7½ ounces egg yolks
2¼ cups condensed milk
1 cup key lime juice
Let cool and set in refrigerator for 1 hour before slicing
and serving.
