Chicken Cordon Bleu
Preheat oven to 350 degrees. Pound each chicken
breast to about ¹/ 8 -inch thick. Place cheese and ham
on chicken breast and sprinkle lightly with salt, white
pepper, and herb blend. Roll each breast with ham and
cheese inside and fasten with toothpicks.
4 skinless, boneless chicken
breasts
4 slices cooked ham
4 slices Swiss cheese
Salt and white pepper to taste
Dip each chicken in melted butter and roll in bread-
crumbs.

¼ cup butter, melted
1 cup fine breadcrumbs
Place each chicken in a greased baking dish and bake
for 50 minutes until chicken is golden brown.
1 cup mushrooms, sliced
1 teaspoon lemon juice
8 ounces chicken stock
To make Cordon Bleu sauce, sauté mushrooms, add
lemon juice, and reduce. Add chicken stock and reduce
half of volume. Add cream and reduce by half again.
Add salt and pepper to taste.

Salt and pepper
Serve hot over chicken. Best with mashed potatoes,
peas, and carrots. Enjoy.
