Cilantro Corn Salad
This recipe will taste better if prepared the day before.
The corn will have time to marinate and take on all of the
flavors.
4 cups corn, may be canned
½ cup roasted red bell pepper,
diced
For this simple salad, mix all ingredients in bowl and
keep in refrigerator until you are ready to serve.
½ cup roasted green bell pepper,
diced
½ cup roasted yellow bell pepper,
diced

½ cup red onions, diced
2 limes, juiced
½ cup virgin olive oil
2 teaspoons garlic, crushed
¼ cup cilantro,
very finely chopped
