the surface generously.
Put the cassoulet in the oven at 300 degrees and let it
cook for 2 to 3 hours. During the cooking, the top will
develop a golden-brown crust that you should press
down several times during the course of the cooking
without squashing the beans. At that time, when com-
pacting the top, check to see that the beans have not
dried out, and if they do, add stock.
Serve very hot, in the casserole, of course.
