Hummus
Combine garbanzo beans, liquid, and sesame oil in a
food processor and pulse, scraping down sides until
smooth. Add lemon juice, garlic, and cumin and blend,
while slowly adding olive oil until very smooth in tex-
ture. Add salt to taste.
2 cups garbanzo beans, canned
¾ cup liquid reserved from can
¼ cup sesame oil
¼ cup fresh lemon juice
. YIELD ,
4¼ cups
3 tablespoons garlic, minced
2 tablespoons ground cumin
¾ cup extra virgin olive oil
Sea salt, to taste
