Slice the duck at a bias into ΒΌ-inch slices. Each breast
should yield 2 portions, for a total of 6 servings; this is
about 6 slices per plate. Place duck and fan across the
chard. In a circular pattern, spoon sauce around the
plate, not touching any of the product.
Garnish with fresh fennel tops and a drizzle of extra
virgin olive oil.
