FINAL DISH
In sauté pan, add olive oil and bring up to medium
heat. Add garlic and cook until golden brown.

Add rest of ingredients and sauté until golden brown.
Add salt and pepper to taste.
3 tablespoons extra-virgin

6 garlic cloves, peeled,
cleaned, and blanched
PLATING
Remove 1 cup of root vegetable mixture and place in
center of deep, 12-inch-wide bowl. Place one 5-6-ounce
portion of short ribs on top of root vegetables. Spoon
3-4 tablespoons of braising liquid over rib (you can add
more depending on what you like).
2 sweet potatoes, peeled, medium
diced, and par-cooked
2 carrots, peeled, medium diced,
and par-cooked
½ pound fingerling potatoes,
sliced into rounds
3 celery ribs, peeled and medium
diced
Garnish with fresh-picked celery leaves and finish with
any flaky sea salt.
