Cilantro Oil
In boiling water, blanch bunch of cilantro for 15 sec-
onds, then put into ice water to shock. Dry cilantro.
Place cilantro into blender and add 4 ounces of olive
oil. Puree for 30 seconds. Pour into stainless steel con-
tainer. Add the remaining olive oil and let set over
night. Strain through a coffee filter.

2 cups olive oil
