Seared salmon with garlic ponzu dressing
PONZU SAUCE
To make ponzu sauce, in a saucepan, bring soy sauce to
a boil. Add bonito flakes to the pan, then turn off heat
and set aside to cool.
1 cup soy sauce
½ cup bonito flakes (pink flakes
of dried tuna)
¼ cup rice wine vinegar
Strain and retain the soy sauce. Mix soy sauce, vinegar,
and lemon juice. Add garlic last.
¾ cup lemon juice
2 garlic cloves

PRESENTATION
Prepare salmon to be seared by spreading garlic onto
each side. In a pan, heat olive oil to smoke point. Place
salmon in pan to sear, turning once.
2½ ounces salmon, thinly cut
1 tablespoon garlic puree
1 tablespoon olive oil
2 ounces ponzu sauce
1 tablespoon sesame seeds
Place seared salmon on a plate. Add ponzu sauce and
sprinkle with sesame seeds. Garnish with organic salad
and serve.
