Snow Creek Oyster Au Gratin
With an oyster knife, remove the top shell of the oyster
and cut the oyster away from the attaching muscle.
Wash off any bits of shell under cold running water.
Return oyster to its half-shell and place on a sheet pan
lined with parchment paper. Clean all oysters in this
manner. Reserve in the refrigerator.
12 Snow Creek oysters
6 thin slices of speck (Italian
bacon, similar to prosciutto)
2 stalks celery, small diced
¼ small sweet onion, small diced
¼ cup Roquefort blue cheese
In a medium saucepan, cook the speck until crisp and
golden brown. Remove from pan and place on a paper
towel to absorb excess fat. In the same pan, add the cel-
ery and onion and sauté until soft. Remove from heat.
¼ cup panko (Japanese bread
crumbs)
2 tablespoons fresh squeezed
lemon juice
¼ cup micro watercress
Salt to taste
Preheat oven to 375 degrees. Remove oysters from
refrigerator and place a small amount of cheese and
celery-onion mixture in each oyster. Sprinkle a small
amount of panko on top. Place in the oven and bake
until cheese has melted.
Fresh cracked pepper
Remove from oven and squeeze fresh lemon juice on
each oyster. Garnish with a piece of speck and micro
watercress. Season with salt and pepper. Serve.
